cook at medium temp for a while

I don't really add any herbs or spices to my soups, most the time I
just make a pot and eat it for a few meals. Little pepper on top,
sometimes add chicken. If I have other veggies, I add them, if
not, then I just make sure I have cabbage and onion for sure.
Broccoli gets mushy if you add it too soon... I just use a variety each
time.

 | I find that combining celery, carrots and cabbage creates a soup that's a bit too sweet for my liking. So adding a few chillies (hot peppers) and some lemon juice or rice vinegar balances it a bit better.

Someone somewhere else said they put a tablespoon of tomato paste in their soup and I thought that was a brilliant idea!  I cook "garbage can" style. I put whatever I have in the frig in my soups and stews. Rich said I don't cook well if I use an actual recipe from a cookbook but when I cook out of the g.c. things come out really great.

6 cups of water 2 tbsp of "Better than Bullion" chicken paste stuff 1 1/2 tsp dashi granules* a gurgle/splash of rice vinegar* 1 tsp garlic-chili paste*† a large squiggle of Siracha sauce*† (it comes in a squeeze bottle ;-) ~1 tsp dried fried garlic (or garlic powder)† 2 stalks of celery - sliced ~2 cups of thin-sliced cabbage 3 small green onions (white part chopped into cooking soup, green part sliced on top of finished soup) 1 egg 1 small can bamboo shoots, drained
Put it all in a pot (except the egg) and cook until the veggies are the texture you like. Whisk egg until yolk & whites are mixed. Scoop veggies into a bowl. Stir broth while slowly pouring in mixed egg. After a minute or two (when egg is set) dump veggies back into pot. Scoop into bowls and sprinkle with green onion tops.
*All this stuff can be found in pretty much any asian grocery (I found the 'fried garlic' flakes in an asian grocery too, but I'd never seen that before...) †Add garlic and spicy stuff to taste, of course!
I don't think I'm forgetting anything. It would be pretty sad if I did, considering I cooked it just an hour or so ago... hehe. |
